Indulge in a twist on the viral French Hot Chocolate, where we replace refined sugar with The Flavor Apothecary's Rich Demerara syrup. Crafted from unrefined Demerara sugar grown in Guyana and Mauritius, our syrup enhances the richness of this decadent beverage while providing a velvety smooth mouth-feel. We also played with the ratio of cream and milk to make this a slightly less richer version than the authentic French Hot Chocolate. Assemble the usual suspects:

8 oz dark chocolate of choice

1/2 cup heavy cream
-
1 cup milk of choice
-
2 teaspoons Rich Demerara Syrup by The Flavor Apothecary

2 teaspoons unsweetened cocoa powder

Flavor the opening act:
In a pot on medium heat, add the heavy cream and milk. Add the cocoa powder when the mix is warm but is not simmering. Stir continuously until tiny bubbles just about start to form -do not boil. Add the Rich Demerara syrup and stir until well blended and tiny bubbles begin to form again. Strain the mixture if your cocoa powder does not entirely dissolve to ensure a smooth, velvety finish.

Add the protagonist:
Add the dark chocolate and stir until well dissolved. The mix should be smooth and shiny, with a decadently thick consistency.

Enjoy the naughty decadence
Add whipped cream and sprinkle with a very light dusting of cocoa powder or grated chocolate. Makes 2 servings which can easily be shared by 4.
